2 oz tuna, cubed
1 Tbsp ponzu sauce
1 tsp sesame oil
1 tsp soy sauce
½ tsp freshly grated ginger
2 dashes red pepper flakes
2 Tbsp mango, cubed
1 Tbsp green onions, chopped
1 Tbsp jalapeno, diced
Salt/pepper
2 ½ Tbsp cucumber, chopped
½ avocado, smashed
DIRECTIONS
Step 1: Marinate tuna for at least 30 minutes.
Combine:
- 2 oz. tuna, cubed
- 1 Tbsp. ponzu sauce
- 1 tsp. sesame oil
- 1 tsp. soy sauce
- ½ tsp. freshly grated ginger
- 2 dashes red pepper flakes
Step 2: Mango salsa
Combine:
- 2 Tbsp. mango, cubed
- 1 Tbsp. green onions, chopped
- 1 Tbsp. jalapeno, diced
- Salt/pepper
Step 3: Prep remaining ingredients
- 2-3 Tbsp. cucumber, chopped
- ½ avocado, smashed
TO ASSEMBLE STACK:
- In a 2.5-inch food ring mold, spoon in cucumber.
- Next, spoon in half of the smashed avocado.
- Repeat with the mango salsa and another layer of avocado.
- Gently press ingredients down with the back of a spoon.
- Place tuna on top layer and again, gently press down on stack.
- Remove the ring, sprinkle with sesame seeds.
- Serve with rice crackers.
