Cucumber Gin Cooler from Saveur
INGREDIENTS
- 8 oz. gin
- 8 Tbsp. fresh lime juice (about 4 limes)
- ½ cup thinly sliced cucumber, scrubbed but not peeled
- Tonic water
- Lime wedges, for garnish
DIRECTIONS
- Fill a cocktail shaker halfway with ice.
- Add the gin, lime juice and cucumber slices.
- Shake vigorously for 1-2 minutes.
- Strain into four glasses filled with ice.
- Make sure the cucumber slices are evenly distributed.
- Top each glass with tonic water and a lime wedge.
Cucumber Mint Martini from Dishes Delish
INGREDIENTS
- 5 cucumber slices
- 8 mint leaves
- 1 oz. freshly squeezed lime juice
- ½ oz. simple syrup
- 3 oz. vodka
DIRECTIONS
- Place the cucumber and mint in a cocktail shaker.
- Add the lime juice and simple syrup.
- Muddle the cucumber and mint together for about 3 minutes.
- Add the vodka and enough ice to fill the shaker halfway.
- Cap the shaker and shake or stir for at least 15 seconds.
- Strain the mixture into a martini glass.
- Use a bar spoon or cocktail pick to place a few pieces of cucumber and some mint leaves on top as garnish.
Cucumber Margarita from A Couple Cooks
INGREDIENTS
- 6 slices cucumber, cut 1/8” thick, plus more for garnish
- 2 oz. tequila
- 1 oz. triple sec or Cointreau
- 1 oz. lime juice
- Ice, for serving
DIRECTIONS
- Rub the rim of a lowball glass with a cucumber slice.
- Dip the edge of the rim into a plate of salt.
- Add the cucumber slices to a cocktail shaker.
- Muddle them to release the juice.
- Add the tequila, triple sec and lime juice.
- Add 4 ice cubes to the shaker.
- Shake for 15 seconds until cold.
- Strain into a prepared glass.
- Fill glass with ice.
- Garnish with cucumber slices.
